fall food

I mentioned making pumpkin chocolate chip cookies yesterday, so here is the recipe. They are very soft and fluffy! Be prepared... it makes dozens and dozens of cookies, so you may want to half the recipe unless you're baking for a very large crowd. (I had to give away lots of them to friends and neighbors and we still have tons leftover.)

1 1/2 C butter, softened
2 C packed brown sugar
1 C sugar
1 15-oz can pumpkin
1 egg
1 tsp vanilla extract
4 C all-purpose flour
2 C quick-cooking oats
2 tsp baking soda
2 tsp ground cinnamon
1 tsp salt
2 C semisweet chocolate chips

In a large bowl, combine butter and sugars. Beat in pumpkin, egg and vanilla. Combine dry ingredients together and add to the wet mixture. Stir in chocolate chips. Drop by teaspoonfuls onto ungreased baking sheets. Bake at 350 degrees for 10-12 minutes per batch.
